Muiche is probably the worst thing I’ve ever come up with. But, it’s late so I’m rolling with it. If you haven’t already figured it out (fool) it’s a muffin-quiche hybrid, and it makes no sense… I couldn’t call them muffins, because they are too quiche-esq. I couldn’t call them quiches because they have flour in them (wholemeal – never fear!)
This muiche (pronounced meesh), is the perfect breakfast for you crazy busy cats who just like to get up and go in the morning. They’re easy to make, easily frozen, delicious, and healthy. They were inspired by my mother’s vegetable garden which, over the summer, was bursting at the seams. I stole zucchini, tomatoes, all the herbs I could grab, beans, snow peas… you name it.
Zucchinis were the real winners and I walked away with at least 5 of those oversized suckers. So naturally, over the last few months, they have stolen the show in my kitchen.

INGREDIENTS:
- 1 and a 1/2 cups grated zucchini (drain excess liquid if very wet)
- 1 onion (diced)
- 100 grams of bacon/ham pieces
- 1 cup wholemeal self raising flour
- 6 eggs
- 1 cup grated cheese (I used Tasty for extra flavour)
- Handful of chopped parsley
- Salt and pepper to taste
- Please note: you can add/remove what you like in this mixture! e.g. remove ham, add chopped sundried tomatoes etc
- Preheat oven to 180c on fan bake and lightly grease (butter or cooking spray) a 12 hole muffin tray.
- Cook the onion and bacon/ham if using in a fry pan. Beat the eggs in a bowl.
- Once cooled, place onion etc in a large bowl and mix with eggs and all other ingredients. Only mix until ingredients are combined – careful not to over do it!
- Disperse into muffin tray and bake for 20-25 mins or until Muiches are golden.
Bon appetit! Make a couple of batches and freeze any that you don’t eat immediately. If you’re planning on leaving in a rush one morning, just transfer a couple from the freezer into the fridge to defrost and grab on the go the following day!
